Tomato Bruschetta

300g cherry on the vine tomatoes, quartered
8 sun dried tomatoes, drained and chopped
3 tbsp Sweet Tomato and Chilli Chutney
12 pitted black olives, chopped
2 garlic cloves, peeled and crushed
freshley ground black pepper
10 fresh basil leaves, torn
1 ciabatta loaf
3 tbsp extra virgin olive oil

Place the fresh and sun dried tomatoes in a bowl with the chutney, olives and half the garlic. Season with pepper and stir in the basil leaves.

Cut the ciabatta across the width into 3 pieces. Cut each piece into 2 slices.

Mix the olive oil with the remaining garlic and some pepper then brush onto the cut sides of the ciabatta pieces. Place them cut side up under a hot grill and toast for 2 to 3 minutes until golden and crisp.

Top the toasted ciabatta with the tomato mixture and serve immediately.

 

ROTARIANS HEAR TALK ON RARE SKIN DISEASE

A joint meeting of Cromer and Sheringham Rotary and Inner Wheel Clubs and their partners this week attended heart rending talk and video on EB (Epidermolysis Bullosa) and the charity DebRA which works to help people with this condition.

Epidermolysis Bullosa (EB) is a very rare genetic condition in which the skin and internal body linings blister at the slightest knock or rub, causing painful, open wounds. It is estimated that there are currently 5,000 people with the condition in the UK. Because EB is an inherited condition (it cannot be caught), which is passed on genetically from parents to children, first time parents often do not know that they are carriers and will have no prior warning that the child will be affected, until birth.

The charity DebRA was founded in 1978 by a group of parents whose children were affected by EB. At the time only some 200 people with EB were known to health professionals in the UK. The original aims of the charity were to stimulate knowledge of, and interest in, EB for the benefit of those with the condition and their families and to fund medical research into EB. DebRA has grown significantly with groups now having been established in 32 countries around the world.

Joining the speaker - the regional manager for DebRA - was Veronica Pearson from Holt whose daughter, Daisy May, suffers from a form of EB called Simplex.

DebRA is one of this year's preferred charities for Rotary District 1080 (East Anglia), and at the end of the meeting Joe Floyd, President of Cromer and Sheringham Rotary Club, presented the charity with a cheque for £50.
